Why do the Mice have Cricket and Beetle farms?

Pets, mostly. I think of Crickets as being like watchdog pets; loud when you need 'em to be. Beetles are used in the comics for delivering messages, but I also thought mice might eat 'em on occasion…

My mice use teams of beetles to pull wagons.

Mice are omnivores…

Yep; no mouse will pass by the idea of having some tasty cricket or beetle. They’re more or less the only critters they can effectively overpower, and thus eat.
